Potato And Spinach Omelette Recipe

I created this recipe when trying to think of something simple to create from left over roast vegetables. It’s pretty simple and it tastes awesome.

You don’t need much to make it, just raid the fridge of what ever is left over.

Add the spinach and cheese

Ingredients

  • Left over roast vegetables (potatoes, sweet potatoes, carrots etc)
  • 3 whole eggs
  • Spinach leaves
  • Cheese

Directions

  1. Grab a good quality non stick fry pan
  2. Toss a small amount of roast veggies in the pan and heat. You want a small enough amount that the egg will be able to run in between the veggies.

Potato and Spinach Pizza

Being a weekday veggie causes you to take a look at some new recipes.

I went out for dinner to a pizza place the other week for my brothers birthday. It was during the week, so I had to order a vegetarian dish. I went for a potato and herb based pizza, I’d never had anything like it before so I had them add some mozzarella and parmesan. It was awesome!

Here is my own version of it.

Ingredients

  • Mini wholemeal pita
  • Basil pesto
  • Three cheese blend (cheddar, mozzarella, parmesan)
  • Potato
  • Spinach leaves

Sugarfree Apple and Carrot Muffins (High Protein)

These muffins will allow you hours of pwning noobs without the sugar rush come down. Check it out! I just watched Aliens and thats why I’m using Hudson’s favourite phrase.

These muffins are also great for cleaning out a few items from the fridge.

Makes 12 muffins.

What mats (ingredients) you will require

Before you get started, make sure you have all these materials or at lease something similar. I’ll go over some items at the bottom that you can swap out to mix this recipe up.

  • 1 3/4 cups raisin bran cereal (or similiar cereal with raisins/sultanas and flakes)
  • 1 1/4 wholemeal flour
  • 1 1/4 tspn baking powder
  • 1 tspn ground cinnamon
  • 1/4 tspn salt
  • 1 egg
  • 3/4 cup buttermilk
  • 1/4 cup canola oil
  • 3/4 cup grated (or finely chopped) apple
  • 3/4 cup grated carrot
  • 1/4 cup walnuts

Healthy Pizza Recipe

For a while I have been watching the cooking episodes on ProAtCooking.com mostly for the humour, rather than the recipes. You will see what I mean if you watch the episode below.

Tonight I decided that I just couldn’t resist the mouthwatering pizza recipe that Dave has cooked up. There are three pizza’s to make, 2 vegetarian and 1 with meat.

Now seeing as how delicious it was (it is currently in my belly), I thought I’d share it with you lot.

A few notes on my experience:

I picked up some wholemeal tortilla’s for the based. There was no mini wholemeal pita’s in the supermarket I stopped off in. These turned out to work really well, just like thin crust pizza.

I also used tomato rather than red capsicum as I didn’t happen to have any red capsicum in the fridge.You will be happy to know that they still tasted great.

Make sure you cook the vegetables properly beforehand as this really makes an impact on the taste of the end product. Also you don’t want crunchy zucchini on your pizza.

Don’t add too much cheese, otherwise you will smoother your pizza and it will not cook all the way through. It will also give the pizza a lighter feel, meaning that you will not feel sluggish and sleepy afterwards. This is a great meal to have after a hard workout.

Overall this took about 20 minutes from start to in my mouth.
