<p>This base is very filling so make sure you make it nice and thin. On the taste side it has a drier taste than a normal flour pizza crust sp make sure you add some sloppy toppings.</p>
<h2>Grain-Free Grilled Eggplant Pizza</h2>
<h3>Ingredients</h3>
<p><strong>Base</strong></p>
<ul>
<li>1/3 cup Coconut flour</li>
<li>1/2 cup Parmesan cheese</li>
<li>2 Tbspn Flax meal</li>
<li>4 eggs</li>
<li>Dash of Sea salt</li>
<li>3/4 cup Mozzarella cheese</li>
</ul>
<p><strong>Toppings</strong></p>
<ul>
<li>Homemade tomato pizza sauce</li>
<li>Eggplant</li>
<li>Mozzarella</li>
<li>Parmesan</li>
<li>Basil</li>
<li>Cherry tomatoes</li>
</ul>
<h3>Directions</h3>
<p><strong>Base</strong></p>
<ol>
<li>Preheat oven to 180 degrees Celcius.</li>
<li>Place all of the base ingredients except the mozzarella cheese into the food processor. We just used the little one that came with our bar mix.</li>
<li>Wizz the ingredients up until there are no more lumps.</li>
<li>Fold in the grated mozzarella.</li>
<li>Bake for 25 minutes in a baking paper lined tray or pizza tray. The top should be browning.

<p><strong>Toppings</strong></p>
<ol>
<li>Chop the eggplant into 1cm thick slices. Place side by side on a foil lines tray.</li>
<li>Season the eggplant with pepper and herbs.</li>
<li>Place in the griller on high for 5-6 minutes until eggplant is soft and browning.</li>
<li>Rub the homemade sauce onto the now cooked pizza base.</li>
<li>Pop the frilled eggplant on top.</li>
<li>Add halved cherry tomatos, mozarella and parmesan to your personal taste.</li>
<li>Bake on 180 degrees C for 20-30 minutes until cooked.

<p>Being a weekday veggie causes you to take a look at some new recipes.</p>
<p>I went out for dinner to a pizza place the other week for my brothers birthday. It was during the week, so I had to order a vegetarian dish. I went for a potato and herb based pizza, I&#8217;d never had anything like it before so I had them add some mozzarella and parmesan. It was awesome!</p>
<p>Here is my own version of it.</p>
<h3>Ingredients</h3>
<ul>
<li>Mini wholemeal pita</li>
<li>Basil pesto</li>
<li>Three cheese blend (cheddar, mozzarella, parmesan)</li>
<li>Potato</li>
<li>Spinach leaves</li>
<li>Herbs</li>
</ul>

<h3>Directions</h3>
<ol>
<li>Preheat oven to 200 degree Celsius

<li>Thinly slice a medium sized potato</li>
<li>Prepare some olive oil in a pan and add the potato slices</li>
<li>Start steaming the spinach leaves.</li>
<li>Add your favourite herb mix to the top of the potatoes and cook until the potatoes are soft (Cook a little longer if you want it crispy)</li>
<li>While the potato is cooking, base the mini pita&#8217;s with the basil pesto (I used a regular sized Pita in this one, the store was sold out)</li>
<li>ADD THE CHEESE NOW</li>
<li>Once the potato and spinach is cooked to your liking add it to your pizza</li>
<li>

<p>Top with a little more cheese and herbs</li>
<li>Pop in the oven for 10 minutes (or until cheese is starting to brown)</li>

<h2>Healthy Pizza Recipe</h2>
<p>For a while I have been watching the cooking episodes on ProAtCooking.com mostly for the humour, rather than the recipes. You will see what I mean if you watch the episode below.</p>
<p>Tonight I decided that I just couldn&#8217;t resist the mouthwatering pizza recipe that Dave has cooked up. There are three pizza&#8217;s to make, 2 vegetarian and 1 with meat.</p>
<p>Now seeing as how delicious it was (it is currently in my belly), I thought I&#8217;d share it with you lot.</p>

<p>A few notes on my experience:</p>
<p>I picked up some wholemeal tortilla&#8217;s for the based. There was no mini wholemeal pita&#8217;s in the supermarket I stopped off in. These turned out to work really well, just like thin crust pizza.</p>
<p>I also used tomato rather than red capsicum as I didn&#8217;t happen to have any red capsicum in the fridge.You will be happy to know that they still tasted great.</p>
<p>Make sure you cook the vegetables properly beforehand as this really makes an impact on the taste of the end product. Also you don&#8217;t want crunchy zucchini on your pizza.</p>
<p>Don&#8217;t add too much cheese, otherwise you will smoother your pizza and it will not cook all the way through. It will also give the pizza a lighter feel, meaning that you will not feel sluggish and sleepy afterwards. This is a great meal to have after a hard workout.</p>
<p>Overall this took about 20 minutes from start to in my mouth.</p>
